What’s inside, jar by jar

1. Dry Mango Pickle (Amsi Achar). Raw mango dried in the sun, then cooked slowly with jaggery in mustard oil. Sweet and tangy, dark and sticky, with a firm bite. Best with rice and dal, roti or paratha.

2. Garlic Pickle (Lahsun Achar). Small local garlic, peeled by hand and sun dried, cooked into a tamarind and jaggery masala. Tangy and bold first, then the jaggery comes through. Best beside dal-bhaat, in a paratha or with curd rice.

3. Green Chilli Pickle (Hari Mirch Achar). Green chillies cut small, coated in coarse mustard and fennel, then left in the sun. Milder than you expect at first, then the heat builds. For anyone who finds other pickles too mild. Best with dal-rice, khichdi or an omelette.

4. Amla Pickle (Amloki Achar). Winter amla steamed until it falls into segments, then cooked down with jaggery and spice. Sour and sweet at once, with a slow spice warmth. Best with khichdi or plain rice.

5. Tamarind Pickle (Imli Achar). Tamarind deseeded by hand and cooked down with jaggery and roasted spice until it coats a spoon. Sharp and sour first, sweet at the finish. A little goes a long way with rice and dal or roti.

6. Jujube Pickle (Kuler Achar). Whole winter kul cooked slowly with sugar and roasted spice. Sweet to start, a mild heat, then a bright tang at the end. Bengalis eat it straight from the jar, and so do we.

Taste & texture

Dry Mango: sweet and tangy, dark and sticky, with a firm bite.

Garlic: tangy and bold first, then the jaggery sweetness comes through. Warm, not fiery.

Green Chilli: milder than you expect at first, then the heat builds. The hottest jar in the box.

Amla: sour and sweet at once, with a slow spice warmth.

Tamarind: sharp and sour first, sweet at the finish.

Jujube: sweet to begin with, a mild heat, then a bright tang at the end.

How it's made

Every jar in this box comes from the same small batches as our 200 g jars. Fruit and vegetables are bought in season, cleaned and cut by hand, and many are dried in the sun first. They are cooked or cured in cold pressed mustard oil with whole spices we roast ourselves, and sweetened with jaggery (or sugar, for the kul) where the recipe needs it. Then the achar rests, so the oil and spice work into every piece, before it is packed into 100 g jars.

Pairs well with

Everyday

Hot rice and dal is all you need. Put a little of each achar on the side of the plate and see which one you finish first.

Good pairings

Amsi and Tamarind with roti or paratha. Garlic with dal-bhaat or curd rice. Green Chilli with khichdi or an omelette. Amla with moong dal khichdi. Kul straight from the jar, or after a heavy meal.

Storage & shelf life

Store in a cool, dry place away from sunlight. Refrigerate after opening and always use a clean, dry spoon, water is what spoils a pickle. Best within 9 months of the packing date.

About The Flavor Chapter

The Flavor Chapter is a small homemade pickle business run out of a kitchen in Kolkata, West Bengal. We make Bengali achar the way it has always been made at home. Seasonal fruit bought locally, cold pressed mustard oil, a spice blend handed down rather than bought in, and enough resting time for the two to meet.

We are not a factory. Every batch is made by hand in quantities small enough for one person to watch over the whole thing, which limits how much we can sell and is why some jars disappear for months at a time. Kul and amla are winter fruit, so we make them in winter.

What we will not do: no chemical preservatives, no vinegar shortcuts, no artificial colour. A properly made pickle preserves itself in oil, salt and spice. It does not need help from a laboratory.

Every order is sealed, double wrapped and packed by hand before it ships across India. If a jar arrives broken, we replace it.

Our kitchen, our people

Why our jars look simple

We spend on what goes inside the jar

We are a small, home run kitchen in Kolkata. Every jar is made by hand in a small batch, the way it is made at home. That costs more than a factory line, where machines and huge volumes bring the price down. We cannot do that, and we do not want to.

So we chose where the money goes. It goes into branded masalas, cold pressed mustard oil and good fruit, with no preservatives to stretch them. It does not go into glossy boxes, shiny labels or brochures. Our packaging is simple on purpose, and what we save there goes back into a fairer price for you.

The people who cook and pack your pickle are paid properly and on time, and we look after them like family. That matters to us as much as the taste.

  • Branded masalas and cold pressed mustard oil
  • No preservatives, ever
  • Simple packaging, fairer prices
  • Fair pay for the people who cook

You may not get a fancy box from us. But one spoon will bring you back.
