Sweet-spicy is the hardest balance in achar to get right. Too much sugar and the chilli disappears; too much chilli and the sweetness reads as a mistake. This range is being built for jars where both arrive in the same spoon and neither one wins.
What we are working towards
Sweet first, heat second
The sugar should land on contact and the chilli should arrive a beat behind it, so the mouthful has a shape rather than a single note.
Same as every other jar
Seasonal fruit, cold-pressed mustard oil, a home spice blend, and enough resting time for the flavours to settle into one another.

The jujube pickle is sweet up front with a real chilli warmth behind it and a tang at the finish — the nearest jar on our shelf to a true sweet-spicy achar. The chalta achar runs a similar line, a little fruitier and milder.
Questions
When will there be products here?
We are still working on the recipe. Bengali sweet-spicy achar is usually built on raw mango or mixed vegetables, and getting the sugar and chilli to arrive in the right order takes more testing than a single-note jar. It will appear on this page when it is right.
What should I buy in the meantime?
If you want sweetness with heat behind it, the sweet range is the closest. If you want heat with something to balance it, our garlic pickle has a mild sweetness underneath the peppery first bite.
