About The Flavor Chapter
The Flavor Chapter is a small homemade pickle business run out of a kitchen in Kolkata, West Bengal. We make Bengali achar the way it has always been made at home — seasonal fruit bought locally, cold-pressed mustard oil, a spice blend handed down rather than bought in, and enough resting time for the two to meet.
We are not a factory. Every batch is made by hand in quantities small enough for one person to watch over the whole thing, which limits how much we can sell and is why some jars disappear for months at a time. Kul and chalta are winter fruit, so we make them in winter.
What we will not do: no chemical preservatives, no vinegar shortcuts, no artificial colour. A properly made pickle preserves itself in oil, salt and sugar — it does not need help from a laboratory.
Every order is sealed, double-wrapped and packed by hand before it ships across India. If a jar arrives broken, we replace it.

How we make this pickle special

Ripe mango, in season
We buy ripe mango only in the short summer window when the fruit is sweet enough to carry the jaggery. Nothing is bought frozen or out of season.

Sun-dried on the terrace
The cut pieces are laid out on the roof for two to three days and turned by hand each morning, until the water is gone and the flavour is concentrated.

Spices roasted and ground fresh
Panch phoron is dry-roasted in a kadai and ground the same day. Ready-made masala flattens the taste, so we never use it.

Rested, then bottled by hand
The pickle sits in mustard oil for a week so the sweet and the heat settle into each other, then it is filled into glass jars in small batches.
Questions about this jar
How spicy is this sweet and spicy mango pickle?
Mild to medium. The sweetness from the jaggery lands first and the chilli warmth arrives a few seconds later. Most people who avoid hot food are comfortable with it.
Is there any preservative or vinegar in it?
No. Salt, sugar and mustard oil are the only preserving agents, exactly as it is done in a Bengali home kitchen. There is no vinegar, no sodium benzoate and no artificial colour.
How long will an opened jar last?
Around nine months if you always use a dry spoon and keep the oil layer covering the pieces. Unopened, it keeps for twelve months in a cool, dark cupboard.
Do I need to refrigerate it?
No. A cool, dry shelf away from sunlight is enough. Refrigerating thickens the mustard oil, which is harmless but makes it harder to spoon out.
What should I eat it with?
Paratha, plain rice and dal, khichdi, curd rice, or in a cheese sandwich. A small spoon is enough because the sweetness is concentrated.
Which jar size should I order first?
Start with the 200 g if this is your first sweet mango achar. Regular pickle eaters usually finish a 200 g jar in three to four weeks and move to the 500 g.
